Banana Smoothie

-Makes 1 serving

Ingredients

1 1/2 cups milk

2 medium ripe bananas

1 cup plain or vanilla yoghurt

1/4 cup honey

1/2 teaspoon ground cinnamon

Dash Nutmeg

5 ice cubes

Directions

In ablender, combine all ingredients except ice cubes and blend until smooth. Add up to 5 ice cubes, one at a time, and blend until smooth.

Easy Honey Muffins

-Makes 12 Muffins

Ingredients

1/2 cup milk

1/4 cup honey

1 egg, beaten

2 1/2 cups of buttermilk baking mix

Directions

Combine milk, honey and egg; mix well. Add baking mix and stir only until moistened. Portion into greased muffin tins. Bake at 350 degress for 18 to 20 minutes or until wooden pick inserted near center comes out clean.

Variation: Cinnamon Apple Muffins: Add 2 cups pared, chopped apples and 1 teaspoon ground cinnamon to basic recipe. Bake about 5 minutes longer than basic recipe.

 

Oklahoma Honey Wheat Rolls

Makes 16 Rolls

1 package or 1 tablespoon active dry yeast

3/4 cup warm water (105 to 115 degrees)

1 tablespoon sugar

2 tablespoons melted butter or canola oil

1/2 teaspoon salt

1 egg

1 cup whole wheat flour

1 3/4 cups all purpose flour (plus an additional 1/4 - 1/2 cup if needed)

Topping:

2 tablespoons additional melted butter for forming rolls

2 tablespoons Honey

 

Dissolve yeast in water in large mixing bowl. Prepare preffered baking sheet -  a large oiled or buttered cookie sheet,regular size muffin tins, 12 inch round cake pan or bundt pan.

Assemble ingredients. Gentle fluff the flours before measuring each one. Measure remaining ingredients and melt butter.

Add sugar, butter, or oil, salt, and egg to dissolved yeast mixture. Beat well. Add 1/2 cup of each of the flours. Beat very well until smooth and satiny. Cover bowl and let rise 15-20 minutes, until mixture is bubbly.

Stir batter down, and add remaining flours, 1/2 cup at a time. Knead to incorporate well. The last 1/4 cup should only be added if dough is too sticky. Try to achieve a smooth satiny result but not too stiff. If dough is too sticky to pinch into balls to shape, knead in 1/4 cup additional flour.

Heavily coat hands with softened butter. To shape, divide dough in half, then continue dividing in half until there are 16 pieces. These make great small dinner rolls when placed concentrically in a pan or in rows. Heavily coated with melted butter, these make nice rolls. After arranging in pan, cover and let dough rise again over bowl of hot water, about 45 minutes to 1 hour.

Preheat oven to 425 degrees. Bake rolls for 12-15 minutes on middle shelf of oven. For topping add 2 tablespoons honey to 2 tablespoons meleted butter; brush the tops of rolls immediately after removing from the oven.

 

Honey Butter

1 cube (4sticks) butter or margarine softened

1/2 cup HONEY

1 tsp. vanilla (optional)

Whip butter until light and fluffy. Slowly add the HONEY and vanilla. Adding the HONEY too rapidly makes the HONEY lose its thick, fluffy consistency. Whip 2 or 3 minutes longer. Cover and refrigerate. Store well.
